Learn step-by-step how to prepare professional-quality sushi rolls with fresh tuna and cucumber, seasoned sushi rice, and traditional accompaniments for an authentic homemade sushi experience.
Rinse the sushi rice thoroughly under cold water until the water runs nearly clear to remove excess starch. Let the drained rice rest for 5 minutes to stabilize.
Transfer the washed rice to a rice cooker and add water up to the marked level (level 2). Turn on the sushi rice cooking program and cook for about 40 minutes.
Prepare the sushi vinegar by mixing 2 cups of rice vinegar, 1/4 cup salt, and 3/4 cup sugar. Stir well, add a small piece of dried kelp, and let the mixture sit for about a minute to dissolve the salt and sugar.
Cut the cucumber into strips about half the length of a nori sheet, removing the seeds to reduce moisture. Slice the tuna into thin strips matching the size of the cucumber, ensuring it is fresh and stored between 1 and 5 °C.
Place the hot cooked rice in a large bowl or wooden tub. Add sushi vinegar at approximately 20% of the dry rice volume (about 1/3 cup). Gently fold the rice to evenly flavor and separate the grains without overworking and releasing too much starch.
Return the seasoned rice to the rice cooker and keep warm.
Lightly coat your hands with neutral oil or moisten them with water to prevent the rice from sticking. Place a nori sheet shiny side down and rough side up on a bamboo rolling mat.
Spread a thin, even layer of sushi rice over the nori, leaving about 2 cm free at the edge to form a rice 'barrier' that prevents fillings from falling out during rolling. Spread a small amount of wasabi to taste.
For the cucumber roll (kappamaki), arrange cucumber strips evenly on the rice with the dry side of the nori facing up. Using the bamboo mat, roll the sushi firmly so the edge of the nori sticks to form a tight cylinder. Press gently to shape a compact, even roll.
For the tuna roll (tekka maki), spread wasabi over the rice and evenly distribute tuna strips similarly to the cucumber roll. Roll and shape firmly ensuring the roll holds together.
