A simple and flavorful chicken biryani recipe perfect for beginners, combining tender chicken, aromatic spices, and fragrant basmati rice for a satisfying meal.
Heat 3/4 cup of oil in a biryani pot and add four medium onions sliced thinly.
Fry the onions over medium heat until they turn golden brown and crispy.
Add half a cup of water to prevent the onions from burning and stir.
Add 1 kg of chicken, 3 tablespoons of ginger-garlic paste, 1 teaspoon of turmeric, 2 tablespoons of coriander powder, 1 teaspoon of cumin seeds, 2 tablespoons of crushed green chilies, 1 teaspoon of chili flakes, and 3 tablespoons of biryani spice mix.
Stir in half a cup of yogurt, season with salt to taste, and add juice from one lemon.
Mix well and cook over medium heat until the oil starts to separate and the spices blend well with the onions.
Add 3 to 4 medium tomatoes sliced thinly and 5 to 6 green chilies, then stir to combine.
Add a handful of chopped coriander leaves and a handful of chopped mint leaves.
Pour in 3/4 cup of water, stir, cover, and cook on medium heat for 10 to 15 minutes until the chicken is tender.
For the rice, bring 3 to 4 liters of water to a boil and add whole spices as per the recipe.
