To keep the apples fresh and prevent browning, toss them with 2 tablespoons of fresh lemon juice.
In a large bowl, combine the sliced apples with 1 cup (200 g) sugar, 1/2 cup all-purpose flour, 1/4 teaspoon nutmeg, and 1 1/2 teaspoons cinnamon. Optionally, add more spices like allspice, cumin, cardamom, or cloves to taste.
Mix everything thoroughly until well combined.
Roll out one pie crust to about 1/8 inch (3 mm) thickness on a floured surface.
Transfer the crust to a 9-inch (23 cm) pie dish, pressing it into the edges and allowing it to hang slightly over the rim.
