Crispy, golden samosas filled with a flavorful spiced potato and pea mixture. This traditional Indian snack features a fragrant blend of cumin, coriander, garam masala, and fresh herbs, wrapped in a homemade flaky dough and deep-fried to perfection.
Combine 2 cups of flour (250 g) with half a teaspoon of salt in a bowl.
Add 1/4 cup of oil or melted butter (60 ml) and mix until the ingredients start to come together.
Massage the flour and oil mixture until it resembles coarse crumbs.
Gradually add 1/4 cup of water (60 ml) and knead the dough until smooth.
Cover the dough and let it rest for 30 minutes.
Cook the potatoes, then chop them into small pieces or mash them into a puree.
Heat 2 tablespoons of oil in a pan, then add 1 teaspoon of cumin seeds, 1 teaspoon of ground coriander seeds, 1/2 teaspoon of garam masala, 1 teaspoon of red chili powder, and 1 teaspoon of turmeric. Sauté the spices for 30 to 60 seconds.
Add 1 chopped green bell pepper, 2 to 3 crushed garlic cloves, 1 teaspoon of ginger paste, and chopped chili. Cook for another minute.
In the pan, sauté 1 chopped onion for 3 to 4 minutes, then add the cooked potatoes and 1/2 cup of green peas (150 g).
Stir in 1 tablespoon of lemon juice, 1/4 cup of water (60 ml), and a pinch of salt. Cook for 4 to 5 minutes, stirring constantly.
