Start by heating half a cup of a high smoke point oil, such as grapeseed or canola oil, to make the roux. Avoid butter at this stage, as its low smoke point can cause the roux to burn and turn bitter.
Prepare the Cajun 'Trinity' by chopping one large onion, two celery stalks, one red bell pepper, and eight garlic cloves into medium pieces. Lightly crush the garlic cloves before use.
Slowly whisk half a cup of flour into the hot oil, stirring constantly to form a roux. Continue stirring until the roux develops a rich, dark brown color, similar to a Hershey's chocolate bar. This process takes several minutes; be careful not to let it burn.
