Discover a simple way to make smooth, creamy hummus with perfectly balanced flavors. This recipe uses tender chickpeas, tahini, garlic, lemon, and a blend of aromatic spices for a delicious dip that improves with time.
Rinse the chickpeas thoroughly under cold running water in a sieve.
Fill a bowl with cold water and rub the chickpeas with your hands for about 2 minutes to loosen and remove the skins.
Allow the skins to float to the surface, then skim them off and discard.
Place the peeled chickpeas into a blender along with 2 garlic cloves, half a teaspoon of salt, 5 tablespoons of tahini, 2 tablespoons of olive oil, and the juice of one lemon (keep the seeds).
Blend the mixture for 7-8 minutes, adding a few ice cubes every minute to keep the mixture cool and enhance its creamy texture.
Taste the hummus and adjust seasoning with more salt, lemon juice, or tahini as desired.
Serve drizzled with olive oil and sprinkled with caraway seeds, sumac, and chopped parsley.
If possible, let the hummus rest for 2-3 hours to allow the flavors to develop and meld.
