Experience the rich and creamy flavors of Malaysian Laksa Lemak made from scratch, featuring aromatic shrimp broth, tender chicken, crispy tofu, and fresh herbs for a comforting, satisfying bowl.
Begin by preparing the shrimp stock ingredients. Heat oil over low heat, add shrimp heads and shells, and fry for several minutes to release their aroma and color into the broth.
Soak dried chili peppers in hot water, then gently crush and chop them into pieces, reserving the soaking water to adjust the paste consistency later.
Slice the galangal and ginger, peel them, and set aside for blending.
Place whole garlic cloves and small red shallots into a blender without chopping.
Lightly crush the lemongrass stalk, trim the end, peel off the tough outer layer, and slice the tender inner part into thin pieces.
Add coriander, macadamia nuts, soaked dried shrimp, and shrimp paste to the blender.
Incorporate the spices: turmeric, coriander seeds, and a pinch of salt.
Add some of the chili soaking water to aid blending, then slowly blend, using a spoon to push the ingredients toward the blades. If the paste is too thick, add more water until you achieve a thick but smooth consistency.
Check that the shrimp shells have released a vibrant red oil in the heated oil, which forms the flavor base for the broth.
Add chicken broth and bone-in chicken thighs to a pot and bring to a gentle boil. Simmer for 20 to 30 minutes to meld the flavors.
