Cut Chinese chives into thick pieces, about one-third in length.
Thinly slice the beef sirloin about 0.5 cm thick, slicing diagonally with a sharp knife for best results.
Place the sliced beef in a bowl and add the marinade: 2 teaspoons light soy sauce, 2 teaspoons oyster sauce, a little sesame oil, and ground black pepper.
Marinate the beef briefly, massaging it well by hand so the flavors absorb and the meat develops a glossy appearance.
