This recipe transforms the classic Outback Steakhouse-style steak rub into a protein-rich, satisfying meal by using lean steaks and adding a side of sautéed chickpeas for extra protein and fiber. Perfect for a hearty and healthy dinner!
Ingredients
Steak Rub
4 g salt5 g paprika4 g ground black pepper2 g onion powder1 g garlic powder1 g cayenne pepper1 g turmeric
Protein Additions
600 g lean sirloin steak240 g canned chickpeas15 g olive oil10 g fresh parsley10 g lemon juice
Procedure
Mix together all the seasoning ingredients to make the steak rub.
Rub the seasoning mixture evenly on both sides of the lean sirloin steaks and let them sit for 10 minutes while you prepare the chickpeas.
Heat 1 tablespoon of olive oil in a medium skillet over medium heat. Add rinsed and drained chickpeas and sauté for 5-7 minutes until golden and slightly crispy. Season with salt and pepper to taste, and stir in chopped fresh parsley and a squeeze of lemon juice.
Meanwhile, heat a grill pan or large frying pan over medium-high heat. Grill steaks 4-5 minutes per side, pressing down gently with a spatula or tongs to sear the edges and achieve a nice crust. Cook to desired doneness.
Let steaks rest for 5 minutes before slicing. Serve steaks alongside the sautéed chickpeas for a balanced and protein-packed meal.
