Procedure
Preheat oven to 150°C (300°F). Wrap garlic cloves in foil and roast for 45 minutes until soft and caramelized.
Trim broccoli into uniform florets and peel and slice stems into elegant batons.
Bring water to a simmer in a steamer pot. Steam broccoli florets and stems for 3-4 minutes until vibrant green and just tender. Immediately plunge into ice water to stop cooking and preserve color.
In a skillet over medium heat, melt butter and cook slowly until it turns golden brown and develops nutty aroma, about 5 minutes. Remove from heat to prevent burning.
Lightly sauté drained broccoli stems and florets in olive oil just to reheat and develop slight color, about 2 minutes. Season with fine sea salt and white pepper.
Mash roasted garlic into a smooth purée and gently fold into the brown butter.
Zest the Meyer lemon and juice half carefully, whisking juice with a teaspoon of olive oil to create a delicate emulsion.
Plate the broccoli artistically, drizzle with brown butter and roasted garlic sauce, finishing with a light spray of lemon emulsion and a sprinkle of fresh lemon zest for brightness.
