This rich and comforting clam chowder features tender potatoes, smoky bacon, and fresh clams in a creamy broth, perfectly seasoned and garnished with parsley.
Peel and cube two large potatoes into roughly quarter-inch pieces.
Mince three garlic cloves or press them through a garlic press.
Place four slices of bacon into a cold large pot or Dutch oven and cook over medium-high heat until crispy, about 6 to 10 minutes.
Using a slotted spoon, remove the bacon and set aside, leaving the bacon fat in the pot.
Add 2 tablespoons of butter to the bacon fat and melt over medium-high heat.
Add the diced onion, celery, and garlic. Stir and cook for about 4 minutes until the onion softens.
Sprinkle 1/3 cup of all-purpose flour evenly over the vegetables, stir well, and cook for about one minute to eliminate the raw flour taste and create a thickening base.
Pour in the clam juice and stir thoroughly until the mixture begins to thicken.
